Baked Potato Casserole


6 to 8 large baking potatoes; peeled
1 pt. sour cream
½ to 1 stick of butter, melted
Salt and Pepper to taste
8 strips cooked bacon
2 bunches green onions, chopped
1 large package grated cheddar cheese

Boil the baking potatoes in enough water to cover them and cook until tender then drain water. Mash the potatoes well and mix in the sour cream, bacon, butter, salt and pepper, and half the grated cheese.
Transfer potato mixture  into a baking dish and cover with the other half of the grated cheese and top with green onions
Cover and bake at 350 degrees for 25 to 30 minutes; remove and serve
